Dairy-free sour cream? That is the gift of the cashew gods! Raw cashews combine with a handful of other ingredients to make this great condiment. You can even adjust the thickness to suit your taste.

soaked at least one hour, rinsed well, drained

Chef Leander's preference is rice vinegar. Anything other than balsamic vinegar is just fine.

Instructions
Put the cashews, garlic, salt, and vinegar and water into the processing bowl.
Process until the mixture is smooth.
Store leftovers covered in the refrigerator.
