Serve up your favorite recipe with this amazing, homemade, Salsa Ranch Dressing. So simple it comes together in less than five minutes! And with all these fresh ingredients, the taste can’t be beat. Whether served with a salad, stuffed peppers, or as a dip, you’ll be proud to make it again and again.
2TBSPwhite wine vinegar (approximate, see instructions)
¼tsppepper , 15 grinds
⅛tspsalt, to taste
1tspsmoked salt, (if using, omit smoked paprika and salt)
In a medium mixing bowl: use a spoon to paste the roasted garlic against the side of the bowl.
Add the vegan mayonaise, lemon juice and vinegar, and all the herbs and spices to the bowl. DO NOT ADD THE MILK just yet.
Whisk to combine being sure to incorporate the pasted garlic. Adjust the thickness by adding the salsa 1 TBSP at a time, until you find the texture you prefer. Usually 2-4 TBSP works well for me.
Transfer to a pint jar and refrigerate. Make this early in the day, or even the day before, for the flavors to develop fully.
Serving Suggestions: This is a now-classic salad dressing, and is also great as a dip on a veggie platter, or for use on oven roasted potatoes.
VEGAN MAYONNAISE: I prefer VegenaiseLEMON JUICE: In general terms, one medium lemon will give you 2-3 TBSP of lemon juice.CHEF'S SECRET: dried herbs concentrate their flavor when they dry, so if you are using fresh herbs, you will want to double or even triple the amount used!HINT: I generally don't use one function kitchen tools. I make an exception for a citrus press! It's a must. It is the best and probably cheapest cheapest tool in my kitchen.GARLIC: I have made this recipe with as many as 4 cloves of roasted garlic, depending on what I am pairing it with. Be cautious! The garlic will "bloom" and get stronger as it sits in the fridge. Consider yourself warned.HINT: In my vegan kitchen, smoked paprika and hickory smoked salt are always on the back of the oven within arms reach.
