Preheat the oven to 400°F / 200°C.Put the peppers in a lightly greased baking dish: 8x8 or 9x13, depending on the size of your peppers. Lightly salt the peppers on the inside. Divide the Faux Beef mixture into the four peppers. Add 1/4 cup (60ml) water to the bottom of the dish. Cover with aluminum foil or a glass lid.
To cook the stuffed peppers: Bake, covered, for 35 minutes. Remove the cover and garnish each pepper with 1 TBSP grated vegan cheese. Bake uncovered for an additional 10 minutes until the filling begins to brown. Put two baked peppers on a plate. Top with 2 tbsp of salsa and two of grated cheese. Garnish with cilantro confetti.Serve with chips or corn tortillas that have been warmed in a skillet.
