As a kid, when I was sick, my mother would give me toast soaked in warm milk with a dash of cinnamon. It was my first understanding of comfort food (weird, I know). In China, they make a weak rice porridge called congee for the same purpose. In the west, congee can also be more substantial—like a vegan equivalent to chicken noodle soup—loaded with healing properties from the grains, herbs, and spices.

In my kitchen, this is a fall and winter favorite! It can be Instant Pot ready-to-cook in less than 10 minutes! I usually have all the ingredients at home, so there’s no shopping. Just put all the good, healthy, fresh foods in the instant pot.
